Ingredients
1 pound chicken breast, cut into 1‑inch cubes
2 tablespoons extra‑virgin olive oil
Kosher salt and freshly ground black pepper, to taste
1/4 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha
1 tablespoon pure honey
1 tablespoon freshly squeezed lime juice
Chopped cilantro, for garnish (optional)
Instructions
- Preheat your grill or oven to 400°F (200°C).
- Toss the chicken cubes with olive oil, salt, and pepper in a bowl until evenly coated.
- Thread the seasoned chicken onto skewers.
- Grill or bake the skewers for 15–20 minutes, turning them now and then, until the chicken is cooked through and lightly charred.
- Stir together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl until smooth.
- Brush the sauce over the hot skewers or serve it on the side for dipping.
- Finish with a sprinkle of chopped cilantro, if you like, and serve right away.
