Ingredients
CAJUN SEASONING BLEND
1 Tbsp smoked paprika
1 1/2 tsp kosher salt
1 1/2 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1/2 tsp dried oregano
1/2 tsp cayenne pepper or less, to taste
1/2 tsp packed light brown sugar
1/4 tsp dried thyme
STEAK BITES
1 1/2 lbs. steak strip steak, sirloin, ribeye, etc.
2 Tbsp vegetable oil divided
3 Tbsp unsalted butter
5 cloves garlic finely minced or grated
minced fresh parsley for garnish
Instructions
- Prep the steak:
Slice the steak into hearty, bite-sized pieces, about 2 inches each. Add them to a mixing bowl and set aside. - Season the steak bites:
In a small bowl, stir together the seasoning blend. Pour it over the steak bites and toss everything well to coat evenly. - Heat the skillet:
Place a large, heavy-bottomed skillet (cast iron is perfect) over medium-high heat. Let it heat dry for a few minutes until you see small wisps of smoke. - Sear the steak bites:
Add 1 tablespoon of vegetable oil to the skillet and swirl it to coat the bottom. Add about half the steak bites (or less if needed — don’t overcrowd the pan).
Let them sear for about 2 minutes without touching, then flip and sear another 2 minutes until nicely browned.
Transfer the cooked steak bites to a plate and repeat with the remaining oil and steak. - Make the garlic butter:
Lower the heat to medium-low and add the butter to the same skillet (don’t wash it!). Once melted, add the garlic and cook for about 30 seconds, stirring and scraping up all the flavorful browned bits from the bottom of the pan. - Combine and serve:
Turn off the heat. Add the steak bites back into the skillet and stir to coat them completely in the garlic butter.
Serve hot, sprinkled with freshly minced parsley.
