Only 3 ingredients and 5 minutes of prep? Yep, it’s that easy. These slow cooker shredded chicken tacos are a total weeknight win and one of our go-to family dinners. Just toss everything in the crock pot, walk away, and let it do its thing. A few hours later, shred the chicken, stuff some tortillas, and boom, dinner’s done.

Ingredients

12 oz. (about 1 1/2 cups) salsa

1 packet of taco seasoning

1lb. boneless skinless chicken breast

Kosher salt

fresh cracked pepper

Instructions

  1. Pour salsa and taco seasoning into your crock pot. Add a pinch of salt and pepper and give it a quick stir.
  2. Add the chicken and nestle it into the salsa mix.
  3. Cover and cook on high for 2 hours or low for 4 hours.
  4. Shred the chicken with two forks and mix it back into all that saucy goodness.
  5. Serve in warm tortillas with your favorite toppings, think diced red onion, cilantro, Cotija cheese, and a squeeze of lime.
